Khasta Moong dal Kachori Recipe
Kachori is a veg recipe of street food it can eat for breakfast or evening snacks, it is one of my favorite food, it is basically from Rajasthan. Moong dal kachori recipe can make very easily available and with less ingredients. It has become instant and crispy. Use moong dal and some dry spice grind it with the help of mixer and make filling spice. Fill it into dough and most important is deep fry it into oil for crispy nature. Ingredients:
- 1 cup maida / all-purpose flour
- 1/2 tsp salt
- 2 tbsp butter
- 1/4 cup water
- 1/2 cup Green dal/moong dal
- 1 tbsp cumin seeds
- 1/4 tbsp amchur powder
- 1/4 tbsp cumin powder
- 1/4 tbsp coriander powder
- 1/4 tbsp turmeric powder
Procedure:
- Take a cup of maida/all-purpose flour in a bowl and add 1/2 tbsp salt and mix it well
- Add 2 tbsp butter/ghee and mix it. Then rub it on your hands and mix all the butter/ghee up to it looks like bread cram.
- Mix a little water and make a soft dough.
- Put it aside for 1/2 hour and covered with a plate.
- In a pan, add 1/2 cup green dal and fry till golden. Stir well to make it crispy. This takes about 10 minutes on medium heat.
- Take it in a mixer jar and add 1 tbsp cumin seeds and grind it in a mixer until it becomes powder.
- Now place it in a bowl and add 1/2 tbsp chili powder, 1/2 tbsp amchur powder, 1/4 tbsp cumin powder, 1/4 tbsp coriander powder, 1/4 tbsp turmeric powder, 1/2 tbsp salt. Mix all this dry spice.
- Add 1 tbsp oil and mix with dry spice.
- Now divide this dough into five equal size portions (If you have taken 1 cup maida).
- Take 1 part of it and give it a round shape and press it on the palm of your hand or you can roll it up to 3-4 inch long, nice and evenly.
- Put 1 tbsp dry spice into it and grab all the edges together just like paratha and pinch them.
- slowly press on hand palm up to 3-4 inches or roll it by using a rolling pin. By the same process, you make the remaining four portions.
- Heat oil in a pan. Heat it and then fry the kachori in it. After 4-5 minutes deep-frying kachori start stale down at the bottom of the pan at that movement you can change the side of kachori.
- Now kachori is ready.
you can eat kachori with tomato sauce and fried green chili.
Tips:
- If you can take 1 cup maida/all purpose flour then you can make 5 kachori.
- To make crispy and multi-layer Kachori you can deep fry it on low flame.
